Biltong is a form of dried, cured meat which originated in Southern Africa. It is made from various cuts and types of meat and is seasoned with salt, pepper and a mix of spices.

Jerky is marinated with spices and flavourings, then cooked with heat.
The difference in process makes Biltong softer, thinner and more flavoursome than jerky, which tends to be drier, smokier, and chewier.
